When the bouenis cook for a party, they really cook. These are our neighbors getting ready for a Muslim festival. Sakina came to our door to ask Julien if he could help another man move that gargantuan pot of rice. Beside it is a fish carri.

 


In the pan on the left are bilimbi, an acidic fruit that grows directly on the tree trunk. It can be preserved in sugar, served as a side vegetable, or eaten in a rougail. In the red basin is achards, a spicy, vinegary condiment made from either green mangoes or green papayas.
